Hello to all my ITP friends around the world,
Can't believe it's Easter already! A gorgeous Autumn morning here, town full of holiday visitors, dozens of boats gone out fishing.
We celebrate the death & resurrection of Jesus at several Church services, including Sunday dawn, followed by breakfast.
Today we are sharing a camp fire oven roast lamb with our son & his family on the farm.
As farmers, 'Easter bunny' is not very welcome, & I resent the commercialization of Easter, so we tend to give plain eggs.

And the same to you and your family, I understand your feelings towards Bunnies - In fact in the part of England where I lived for many years it was considered unlucky to say the "r" word it was
up there with *&%#*^& type of words!!!!
We are watching the snow disappear, bulbs emerge and the robins returning. Oh Happy Days!!

Happy Easter to one and all! Unfortunately, it is getting too commercialized. We don't do gifts in my family, but we do get together and my mother always has chocolate goodies on the table for us.

Like Christine, we are watching the snow finally melt. Saw my first robin a few weeks back during a snow storm. I have a pair of cardinals that come around and I spend a lot of time watching them. Needless to say, I don't get much house work done!

Of course, here in my neck of the woods, we can expect at least one more snow storm before Spring comes.

We do remember the reason for Easter - but - we also like the Easter Bunny and the brightly colored eggs he brings along with the fun of finding them and the joy of a day spent with family.

Real bunnies I don't like, and we don't live on a farm - they dig holes in our grass, I can no longer have flowers or vegetables at ground level, they poop all over the place, and last year one got into one of the raised planters my husband had made and had been bunny-free for 5 years [dang bunny pulled up all the parsley & basil and dug a huge hole down and then under the roots]. Nope don't like real bunnies at all, but that Easter Bunny is too cute and is welcome every Easter Sunday so we can enjoy the delight our grandchildren have in finding eggs [and how the older kids help the younger kids find the eggs].

Happy Easter!

We are having the traditional dinner...ham, potato salad and pickled eggs, but no big deal here. Easter was never one of my favorite holidays. Just looking forward to a nice quiet day and a good meal.

Melinda - my daughter has a pet rabbit, her second one. They are cute pets! She's all grown up, but still likes her bunnies!

Sandi you pickle the eggs? I think once grandkids come you will like Easter better - they are so cute hunting those eggs!

I would love to give your daughter all the bunnies in my yard - really they are cute but wild ones destroy my yard & garden, ugh!

No big deal here either. A secular holiday for me with Hot Cross Buns and chocolate Easter Eggs.

But you've now given me a yearning for pickled eggs. It's been a long time since I had one and I may have to buy a jar tomorrow. Pickled egg, crisps and a bottle of wine. Now that does sound rather nice. It's a Bank Holiday here tomorrow so no work until Tuesday for me. One more day to relax.

CindyAnn - never saw a rabbit quite that big! Geez, he's bigger than the man!

Ann - never had wine with pickled eggs. That's a new one!

CindyAnn I'd swear that is the size of the bunnies making holes in my yard and eating my raised vegetable garden!

Sandi pickled eggs aren't a tradition all over the States - we hard boil eggs and that's what the Easter Bunny hides, and the leftovers get made into egg salad or deviled eggs. Actually I've never had a pickled egg.

I was kidding. They are a big part of PA, along with stuffed cabbage, haluski and pierogies. Hunky food.

Love pierogies & stuffed cabbage. Only place I've seen a pickled egg is in a jar at a bar :) [Seriously, how do you pickle them?]

I was raised on German food - yum!

Melinda - easy. Hard boil the eggs. Boil 1 cup vinegar, 1 cup beet juice, 1/4 cup sugar. When it cools, pour it over the peeled, boiled eggs and beets and refrigerate for 24 hours. Eat!

My eggs and beets barely turned pink this time. Looked very anemic, but taste good. The beet juice they sell these days is pretty weak. It's actually better to use fresh beets and I may try that next time.

I'm half German too, but the hunky part of this area dictated the menus.

The beets are cooked?
That does sound good - pickled eggs I saw were just plain old white and not appetizing looking. But I love beets and what you pickle the eggs in sounds good. Thanks!

You don't cook the beets, just put them in the cooked juice.

Let me know if you ever make them.
